In response to outbreaks of bird flu in dairy cattle, the U.S. government is collecting samples of ground beef from retail stores in affected states to ensure the safety of the meat supply. While both the Centers for Disease Control and World Health Organization have stated that overall public health risk is low but higher for those exposed to infected animals, there is no reason to panic about consuming beef from affected areas as long as proper testing procedures are followed and contaminated products are removed from shelves immediately after testing positive for bird flu virus antibodies or DNA fragments that may indicate exposure to bird flu virus-infected animals or products derived from such animals.
